This sweet and savory panini uses fresh mozzarella cheese drizzled with honey and crisp apple to qualify as low histamine. Aged cheeses aren’t allowed in this diet, so I’ve been finding myself missing brie, cheddar and plain old grilled cheese. This sandwich is my answer to all my cheesy cravings. I use a pink lady apple, which I love for it’s sharp tartness and dependable crispness, but you can use your favorite. The ingredients do best with plenty of salt to bring out the flavors, which is always an added bonus for POTSie. For a crunchier version, lightly toast the bread beforehand.
Ingredients
- fresh mozzarella cheese (either shredded or in water)
- bread of choice
- pink lady apple
- arugula
- tablespoon honey
- tablespoon olive oil
- salt to taste
Instructions
CUT apple using mandolin or just thinly slice.
LAYER mozzarella cheese on a slice of bread, sprinkle with salt, and top with other bread slice. (Don’t forget to pat the cheese dry, if it’s been sitting in water!)
HEAT olive oil in pan on medium-high heat for a couple minutes. Fry one side of sandwich for about 2-3 minutes or until bread gets golden and crispy.
FLIP sandwich and fry other side until bread golden and cheese melted through. Plate sandwich and separate bread to put on remaining ingredients.
HEAT honey for 5-10 seconds in microwave, then drizzle onto opened sandwich. Sprinkle salt to taste.
LAYER on apple slices and arugula, and top with the bread slice.

This looked so yummy! Unfortunately, I took one small taste of mozzarella and had to go th the ER. 😭 this looks so good though. I’m still looking for foods I can eat. Cream of rice and wheat is al I can have right now.
